Red and Yellow Bell Pepper Sauce with Sausage

This recipe called for peeling the three bell peppers, which was a pain and took 20 minutes.  But it was worth every minute.  I used chicken apple sausages (two for the whole recipe).  It was really an excellent sauce, which I served over farfalle.  I used half the sauce for the two of us and froze the other half.
